Fairmont The Mere — formally Fairmont Cheshire, The Mere — opened on 10 July 2026 after a £125 million transformation: 116 rooms and 23 suites on The Mere Lake, Gordon Ramsay’s restaurant, a spa in a restored Victorian stable block, and an 18-hole championship course drawn by James Braid in the 1930s.
Every county in England has a hotel everyone’s been to a wedding at. In Cheshire, for generations, that was The Mere — a lived-in lakeside estate woven into local life long before “luxury” became a category. On 10 July 2026 it re-emerged as Fairmont Cheshire, The Mere: a £125 million transformation by owner Select Group that turns a beloved regional institution into the North West’s most serious luxury address, and gives Fairmont a true English countryside flagship.

The Local Institution Gamble
Transforming a hotel the county already loves is harder than building new — the wedding parties and Sunday lunchers arrive with ownership feelings no international brand can buy. The £125 million answer is to keep the estate’s social DNA (The Orangery’s champagne teas, the Club Lounge’s deliberately unstuffy mix of British and Indian cooking) while stacking genuinely top-tier hardware on top: a Ramsay flagship, six-room spa suites in Victorian brick, ice baths and hammam where the stables stood. The golf is the quiet trump card — a Braid and Duncan design from the 1930s is heritage the Cotswolds’ new openings can’t manufacture, and it anchors Fairmont The Mere for the Manchester wealth corridor that has lacked a five-star resort of its own.

Britain’s Countryside Reopening Wave
Fairmont The Mere joins a striking run of British estate revivals this year — at the other end of the scale and the country, a clan family just reopened its 300-year-old inn on Loch Lomond — and the two make an instructive pair: one bets on 45,000 acres and family history, the other on £125 million and brand machinery. Both are answers to the same demand: British travellers rediscovering their own countryside at the top end.

Tip: Cheshire is a shoulder-season county — book September or May for the golf course at its best and the lake without the wedding-season bustle; Saturdays here will belong to celebrations for decades yet, so aim midweek for the quiet version of the estate.
How Much Does Fairmont The Mere Cost?
I priced a midweek autumn night — Wednesday 21 to Thursday 22 October 2026, two adults, one room — across the sites that carry Fairmont The Mere. The entry category is the Fairmont King (26 sq m, full English breakfast for two). Trip.com was cheapest on the day I looked at £257 a night, or £309 once taxes and fees are added. Expedia listed the same room at £347 with taxes and fees included. Booking.com prices this property in euros rather than pounds and showed €405 for the night, breakfast and taxes included. Move up to a Junior Suite King (41 sq m) and Expedia quoted £602 all-in, while Booking.com had it at €702.
On a property like this the sites usually swing 10–20% apart, and five minutes of clicking can save you real money — here Trip.com came in nearly £40 under Expedia on the same room on the same night, which is the kind of gap worth checking rather than assuming. The links below are pre-filled with the property.
- Check rates on Booking.com — free cancellation on most room types, no prepayment needed.
- Compare on Trip.com — came in cheapest on the dates I checked.
- See it on Expedia — useful if you are bundling flights into Manchester.
